The aim of this work is to develop a simple quantitative method for the analysis of volatile nitrosamines using the microsteam distillator-extractor. It is shown that this procedure compares favorably with available methods, although further studies will be useful to improve the recovery of the high-boiling nitrosamines and for application to other types of food matrices.
